Khinkali

In Tbilisi Kirsten took us to a restaurant that specialized in “khinkali”, a kind of large dumpling with a filling such as cheese or meat along with a hot broth. They are pretty large, and made by rolling out the dough and then pinching it together at the top. You hold the pinched-together part to eat it, which involves making a small bite in the dumpling to drink out the broth before biting into it in earnest.
